Tortellini-sausage soup

A Thursday that had turned cold while I wasn’t looking. I opened the cabinet, saw a can of beans and a bag of cheese tortellini, pulled a tube of sausage out of the fridge, and thirty minutes later this soup was on the table. Spinach at the very end so it stayed green. My husband held the bowl in his lap on the couch and said this is the kind of thing you make when it’s time for soup. It was time for soup.

A round white bowl of tomato-broth soup packed with cheese tortellini, rounds of Italian sausage, white beans, and ribbons of wilted spinach, a snow of parmesan over the top.
