A cherry pie

I don’t make pie all that often. Pie is a commitment - dough in the morning, filling in the afternoon, lattice at an hour when my patience is lowest - and most nights I want the dessert to be done in forty minutes. But I was in the mood for the long version. A Wednesday. Cherry because my husband asked. Lattice because if you’re going to go to the trouble, go to the trouble. I took this picture while it was still bubbling on the stove. That’s the part I’d make again just for the picture.

A round white ceramic pie dish resting on a gas stove, a lattice-top cherry pie with deep-red filling bubbling up through the woven crust, the lattice strips evenly golden and the edges crimped.
